PORK CHOPS IN CHAMPAGNE GINGER SAUCE
8 pork chops
Salt & pepper to taste
2 Tbsp. vegetable oil
2 shallots, minced
1/2 cup brut champagne
1/2 cup half and half
2 Tbsp. chopped crystallized ginger
1 tsp. Dijon-style mustard
1 to 2 tsp. lemon juice
2 Tbsp. butter, cut into bits
Chopped green onions, to garnish

Banana Bean Muffins
Make these moist muffins once and you'll always keep pureed beans in the freezer for quick baking. Yields 20 muffins.
3 egg whites
1/4 cup + 2 Tbsp. Splenda brown sugar blend
1/2 tsp. vanilla extract
2 large ripe bananas mashed (about 1 cup)
1/4 cup vegetable shortening
